Black Turtle Beans

Grown in Butte County, the turtle is a classic black bean variety. Inky purple, and intensely meaty these beans are ideal for the bold flavors of Latin America, Indian, Caribbean, and Southern cuisine. Hearty enough for vegetarian recipes as well as roasted and braised meats.
- season with green pepper, onion and chili and mash for an earthy, rich side dish
- add to casserole and or enchilada filling with summer squash and corn
- stir into quinoa with diced mango for a quick, protein-packed lunch
