Like its sweet, seductive Basque cousin this ground chile powder brings an earthy spice to finished dishes or soffrito. Using the seeds of the Espelette pepper, these hand-harvested, Northern California-grown chiles are dried and ground into a rustic powder we find ourselves using everywhere for a pop of color and a little heat.
- dust over lemon-flecked hummus with a slick of Spanish olive oil
- mix with California sea salt and use as a spice rub for whole roasted chicken
